Summer BBQ: Vegetarian Edition!

Ah summer, that incredible time of year when days are spent by the pool, and nights are that perfect balmy temperature that lends itself so well to midnight bike rides! Another classic cornerstone of summer is the backyard BBQ, and although the old standby is hamburgers and hotdogs, with the ever-expanding catalog of dietary restrictions people have, diversifying is key. Boca Burgers are good and all, but sometimes it's nice to think outside the box from the freezer aisle. With that in mind, today we're taking you through some of our favorite vegetarian and vegan recipes that will please your meat-eating and non meat-eating friends alike! Portobello Peach Burger / Pumpkin Burger Veggie BurgersHow amazing do these two burgers look? The sweetness of peach mixed with smokey Portobello mushrooms are enough to sell us on this recipe from Green Kitchen Stories. Not to be outdone, Peas And Crayons provide a recipe for these gorgeous pumpkin burgers that prove that pumpkin isn't just for autumn. Vegan Mac N Cheese Mac N CheeseThere are all kinds of recipes out there for vegan Mac N Cheese, but we love this one from Vegan Yumminess. With a creaminess provided by potatoes, coconut milk and cashews, and absolutely no refined oils, this is one recipe we're definitely saving for our next BBQ! Vegan BBQ Lentil Meatball Sandwich Veggie Burger The flavor profiles on this vegan burger look amazing. With a sweet miso coleslaw to go with, this BBQ lentil meatball sandwich has a few more steps than our other featured recipes, but the end product is definitely worth the effort.
